  • 2 cups diced sweet potato
  • 1 tbsp lime juice, more to serve
  • 1/2 tsp cayenne
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp raw honey or maple syrup, more to serve
  • 4 lettuce leaves such as green leaf, red leaf, butter leaf, or romaine
  • 1/4 cup loosely packed cilantro leaves, roughly chopped
  • 1/4 cup thinly sliced spring onions

Directions:Preheat oven to 400F/200C. Line a baking sheet with parchment paper.In a medium-sized mixing bowl, combine the sweet potato, lime juice, cayenne, ground cumin, ground coriander, and raw honey or maple syrup. Toss until well combined.Transfer the sweet potato mixture to the baking sheet and roast in the oven for 15-20 minutes, until tender when pierced with a fork.Remove from oven and cool slightly.Arrange lettuce leaves on a platter or plates. Top with roasted sweet potato, cilantro, and spring onion and drizzle with raw honey and lime juice. Serve immediately.Serves 1
