Italian Potato Salad
Ingredients:
2 lbs baby potatoes, washed and halved1 cup cherry tomatoes, halved3 celery sticks, sliced1/2 red onion, thinly sliced1/2 cup pitted raw olives (link on blog)1/4 cup fresh basil, chopped1/4 cup fresh parsley, chopped1/4 cup lemon juiceSea salt, to tasteBlack pepper, to taste
Directions:
Place the baby potatoes in a steamer or colander set over a ppt of boiling water. Cover with a lid and steam for 15-20 minutes, until tender. Remove from heat and cool completely.
Place the cooled potatoes in a large bowl and add the cherry tomatoes, celery, red onion, olives, chopped basil and parsley, lemon juice, sea salt and black pepper. Toss until combined and serve.
Serves 4
